Recipes of The Hunger Games Cookbook – Week 2 Giveaway

PEETA’S MULTIGRAIN BREAD

MAKES 2 LOAVES
Peeta brought this yeasty bread to Haymitch one morning and Haymitch had the bad grace to hand him a filthy knife to cut it. Ever respectful of the work and ingredients that go into a loaf of bread, Peeta opted to clean the knife before using it.
If you’ve never baked bread, this is a good recipe to use for your first time. It’s a very basic recipe that yields delicious results.
1 CUP WARM WATER (110 DEGREES)
1 PACKAGE ACTIVE DRY YEAST (21⁄4 TEASPOONS) 1 TABLESPOON WHITE SUGAR
6 CUPS WHEAT BREAD FLOUR, DIVIDED
1 CUP MILK, ROOM TEMPERATURE
2 EGGS
2 TABLESPOONS BUTTER, SOFTENED
2 TEASPOONS SALT
1⁄4 CUP FRESH THYME, CHOPPED
1⁄4 CUP FRESH CHIVES, CHOPPED
1 EGG WHITE
2 TABLESPOONS WATER
In a small mixing bowl, dissolve yeast and sugar in 1 cup warm water. Let stand about 10 minutes.
In a large bowl, stir together the yeast mixture with four cups of flour, milk, eggs, butter, salt, thyme
and chives. Add the remaining flour 1⁄2 cup at a time.
Turn dough out onto a lightly floured surface and knead about 8 minutes. The dough should be soft, smooth and not sticky.
Place dough in a lightly greased bowl, cover with a damp cloth and put in a warm area to rise for about an hour, or until double in size.
Grease 2 aluminum loaf pans. Punch down the dough and turn it out onto a lightly floured surface.
Knead gently for 1 minute and form into 2 ovals.
Place in loaf pans, cover with a warm cloth and let sit for another 40 minutes.
Preheat oven to 350 degrees.
Lightly beat the egg white and 2 tablespoons of water and brush over bread. Bake for 30 minutes.

TRIBUTE LAMB CHOPS
SERVES 4
The highlight of Katniss and Peeta’s first meal on the train was these tender lamb chops. A rich dish for anyone, it was incredibly decadent to these young people who rarely had meat on the table.
Lamb absorbs the flavors of herbs beautifully, so use fresh herbs to get the best results. Allowing the meat to rest for 10 minutes after cooking will ensure that it’s moist and flavorful.
2 TABLESPOONS PLUS 1 TEASPOON OLIVE OIL 1 TEASPOON FRESH ROSEMARY
1 TEASPOON FRESH TARRAGON
1 TEASPOON FRESH THYME
1 TEASPOON FRESH PARSLEY
2 CLOVES PEELED GARLIC
4 LAMB CHOPS CUT 1-INCH THICK SALT AND PEPPER
Place olive oil, rosemary, tarragon, thyme, parsley and garlic in food processor until a fine puree is achieved. Set aside.
Salt and pepper both sides of each lamb chop.
Take 1⁄4 of the herb mixture and rub onto both sides of each lamb chop, then place the herbed chops onto a plate.
Once all of the chops are covered with the mixture, cover the plate with plastic wrap and allow them to marinate in the fridge for 1 hour. Remove plastic wrap and let it to come to room temperature.
Set oven to broil and allow to heat.
Heat a cast-iron or other heavy, large skillet over high heat.
Add 1 teaspoon olive oil and sear chops for 2–3 minutes per side until nicely browned.
Remove pan from heat and place in the oven. Broil for about 7 minutes or until medium rare. (This recipe works great on the grill too!)
Let meat rest 10 minutes so the juices recede.
Serve with Creamy Mashed Potatoes.

MR. MELLARK’S FAREWELL COOKIES
MAKES 2 DOZEN
When Mr. Mellark brought a paper packet of cookies to Katniss after the reaping, it touched her, but not nearly as much as his promise to watch out for Prim.
Here’s a recipe for spicy cookies using ingredients the Mellarks appear to have had. These are tasty snacks and would hold up well on a train journey, too.
2 CUPS ALL-PURPOSE FLOUR
3 TEASPOONS CINNAMON
1 TEASPOON GROUND GINGER
1 TEASPOON BAKING POWDER
1⁄2 TEASPOON SALT
1⁄2 TEASPOON GROUND ALLSPICE
1⁄2 TEASPOON NUTMEG
1 STICK UNSALTED BUTTER AT ROOM TEMPERATURE
3⁄4 CUP DARK BROWN SUGAR 
1 EGG
1 TEASPOON VANILLA
In a large bowl, combine all of the dry ingredients, except the brown sugar, with a whisk or wooden spoon. Mix until well blended and set aside.
In a medium bowl, use a hand mixer to cream together the butter and brown sugar until it is light and fluffy. Add the egg and vanilla and mix until well combined.
Add the dry ingredients a cup at a time and mix just until blended and the dough is smooth.
Cover the dough with plastic wrap and refrigerate for at least 3 hours, or overnight.
Preheat your oven to 350 degrees.
Lightly dust a large, clean work surface with flour and roll the dough out to about 1⁄4-inch thick.
Use a cookie cutter or a cup to cut the cookies, re-rolling the scraps as you go.
Place the cookies about 1 inch apart on a lightly greased baking sheet and bake for 10 minutes, or until golden.
Let cool on the pan before removing with a spatula.
